Consider the Oyster.
Whether you, as did M.F.K. Fisher, consider it to be "A lusty bit of nourishment" or "A supper to sleep on", you will most likely resonate with the 1941 advertisement in the Philadelphia Inquirer that pleaded, "Cook must understand oysters. Apply aft 1p.m. Iliffe, 847 E. Allegheny".
Finally, the request is filled. Chef Ricky Kirsop, of McCormick and Schmick, understands oysters! Join the Chef and members of the Philadelphia Bailliage on March 22 to celebrate the marvels of this wonderful bivalve in a special tasting event.
We will begin with a reception featuring icy-cold oysters served on the half-shell, along with other delights from the sea. Well taste six unique varieties that express a wide range of flavors. Featured among these offerings will be the proprietary "Charleston Salt Pond" oyster, available only from McCormick and Schmick. You might agree that they are among the most delicious oysters available anywhere. Of course, a classic Muscadet will accompany.
We will move to tables in McCormick and Schmicks elegant and airy upper room, where we will be served a succession of prepared oyster dishes that reflect the Chefs creativity, to include Kumamoto oysters with an Asian ginger jelly and tempura-style Malpeque oysters with a coulis of orange and tomato. An oyster feast would not be complete without soup, and well enjoy a clear broth flavored with lemon grass and melon along with Olympia oysters. Wines that will be paired with these courses include an Albariño, a Grüner Veltliner, and a halbtrocken Reisling. To provide a short break from oysters, well then be served a salad of caramelized grapefruit and goat cheese.
We will continue with a classic fish course, snapper with Willapa Bay oyster cream, followed by a showstopper of New Orleans-style oysters with crispy corn cakes and tasso cream and then the Chefs signature treatment of a roasted filet mignon, all accompanied by appropriate wines. Finally, a touch of chocolate will round out a spectacular and enlightening evening.
