On
Sunday December 2, we will return to an old Chaine friend, the Hotel
DuPont,
for an elegant Holiday event. Chefs Tom Hannum, Patrick D'Amico and
Pastry Chef
Michelle Mitchell have created an exquisite feast for us to enjoy in
the
beautiful Green Room. We begin the
evening with a Perrier Jouet Champagne reception, and then we'll
proceed to the
Green Room to dine in grand style. Our repast will begin with an Amuse
of seared
sea scallops with asparagus, heirloom tomato tartare, and beet foam.
The
first
course will be a butter poached lobster with English pea soup and micro
beet
greens. Our second course will be pan-seared Hawaiian Mero sea bass
with smoked
tomato caramel and applewood bacon grits-yes, we said grits!
A
three sorbet intermezzo, including the flowery Flora di Sicilia,
follows. We
then proceed to veal tenderloin and seared foie gras, accompanied by
fingerling
potato puree with chanterelle and morel mushrooms in a truffle jus. Our
cheese
course will feature "Humboldt Fog" Cypress Grove Chevre, with heirloom
tomatoes, winter greens and an orange -lime viniagrette. We conclude
the
evening with a truly decadent deseert, a chocolate hazelnut praline
mousse
crunch. . In addition to the Perrier Jouet champagne, the dinner
will
feature wines from Cakebread Cellars, Acacia, Bouchaine and
Matanzas
Creek vineyards and a dessert wine, Rosa Regale Braquetto
D'Aqui from
Banfi.
We
