What a great evening we have planned for those Chaîne members able to join us at Django on Monday,

May 22, 2006! If you have not yet experienced this unique jewel of a Center City restaurant, here is but one of the many accolades Craig LaBan, the Philadelphia Inquirer food critic, has written about Django: "This is

an intensely personal food-lover’s paradise where the seasonally inspired menu and seamless service are, dollar for dollar, unmatched in the City."

Chef/partner, Ross Essner, has created a splendid menu for us, focusing on seasonal ingredients from local farmers and other boutique purveyors. Our champagne reception will include rare Kumomoto oysters, Surf’‘n Turf sliders and Fingerling "skins". Once seated , we will be treated to an Amuse Bouche of chilled pea cream with mint and crispy prosciutto followed by the first course, a delightful preparation of spring asparagus and duck egg, dressed with truffle vinaigrette. Next, the second course of tuna, two ways, carpaccio with Thai curry vinaigrette and tartare with local early greens followed by an interesting combination of seared Diver scallops, braised veal, horseradish-sweet potato puree with two sauces for the third course. Spring lamb, from Meadow Run Farm, will be presented in the manner of a "tasting" for our main course. One of the restaurant’s signature offerings, a ten-cheese plate with accompaniments, will precede our 6^th and final course-a surprise dessert chosen by Chef Essner! Naturally, appropriately paired wines will compliment each course.
